Nutrient composition of fresh produce to substantiate nutrition and health claims


As part of my PhD project on the application of nutrition and health claims on fruits and vegetables in the European region, we investigated the use of national food composition databases. Regional and National regulations on claims allow the use of such data to substantiate claims, however, due to the large variety of factors affecting the nutrient concentration we felt to urge to compare reported composition across countries.
